1 large courgette
2 medium-sized sweet potatoes
2 medium-sized red onions
125g St Helen’s Farm Goats’ Cheese
40g St Helen’s Farm Goats’ Butter
1 garlic clove, crushed
Salt and pepper
Pre-heat the oven to 200˚C/fan 180˚C/gas 6.
Wash the courgette, and peel the sweet potatoes and the onions. Slice the vegetables thinly into rounds. Slice 100g of the goats’ cheese into similarly thin slices and grate the remaining 25g.
Melt the butter and pour it into a round ovenproof dish along with the garlic. Then arrange slices of courgette, sweet potato, goats’ cheese, and red onion, repeat until the dish is fully covered. Season to taste and top with grated cheese.
Bake for 25-30 minutes until golden brown.
This Courgette and Sweet Potato Tian is delicious served with salad and bread.
