Salmon with Black Beans,
Lime & Goats Cheese
Salmon with Black Beans, Lime and Goats Cheese is a simple yet incredibly tasty and healthy dish. A tray bake that will save on the washing up is just another reason to feel great about choosing this bursting with flavour dish!
4 salmon fillets
2 peppers (yellow and orange), deseeded and diced
2 tablespoons fajita seasoning mix
1 teaspoon oil
275g cherry tomatoes, halved
400g can black beans, drained and rinsed
75g St Helen’s Farm Goats' Cheese, cubed
1 avocado, peeled, stoned and sliced
1 lime, cut into wedges
Preheat the oven to 200°C/gas mark 6.
Put the salmon and peppers into a large roasting tin. Mix the Fajita seasoning with a teaspoon of oil and rub the mix onto the salmon and pepper.
Roast for 20 minutes until golden. Remove from the oven and add the tomatoes, beans and goats cheese to the dish. Place back in the oven and cook for 5 more minutes, until the salmon is cooked through.
Scatter over the avocado and fresh coriander and serve with lime wedges to squeeze over. Delicious with warm flatbreads.
