These Banana Bites are great for on-the-go or relaxing at home with a cuppa. They are packed with manganese, helping your body produce the energy it needs to fuel you throughout the day.
3 dates, pitted and finely chopped
Rind 1 lemon
Pinch vanilla powder and cinnamon
2 ripe bananas
125g St Helen’s Farm Natural Goats Milk Yogurt
2 tablespoons maple syrup
50g cacao nibs
1 banana for decoration
2-3 tablespoons of lime juice
Preheat the oven to 180°C/Fan 160°C/Gas 4. Baking tray - greased (and lined with parchment).
Mix together oats, dates, lemon, vanilla and cinnamon.
Mash banana, add yogurt and maple syrup, stir into oat mixture and mix well. Add cacao nibs.
Spoon onto a baking tray and shape into rounds. Dip the banana slices into lemon juice and place one on each of the rounds. Bake for 20-25 mins until golden brown.
